I need some help, I choose to do soup for a food product development, but it has to be creative and new?

It also has to be chilled, I was thinking of minestrone, but changing it and making it different somehow. Any ideas?

  2. If you use minestrone, then there's no real way to 'change' it to make it new, seeing as how there is no set recipe and the soup changes with the season. I suggest changing up a gazpacho recipe. Since it is a spanish-inspired tomato soup, why not remove the spanish-style elements (such as peppers, red onions, ect) and add in some ingredients that accent the flavors already there. For example, I suggest omitting the red wine vinegar and replacing it with beef stock, and switching the peppers for a leafy green. However, switching ingredients can make or break a dish, so try it out yourself and experiment with different flavors!

CHILLED AVOCADO SOUP 4 ounces sour cream 2 avocados, peeled, seeded and puréed 6 3/4 ounces green chilies, puréed 1/2 tablespoon garlic powder 1/2 quart light cream 1 cup heavy cream 1/4 onions, puréed 1 ounce chipotle chile pepper, puréed 1 cup whole milk to taste salt to taste while pepper Combine all ingredients into a large mixing bowl and mix well. Allow to chill overnight to let the seasonings blend before using.
